Hi, I’m KC the Kitchen The Juicer. No, I’m not a device.  I’m a self taught cook and personal trainer in Beverly Hills, CA.  I’ve developed a healthy, easy and divinely delicious concept of eating.  It’s called The Juicer!

It’s so simple.  The Juicer is all about various combo’s of greens, raw and cooked veggies, protein, carbs, fruits and herbs.  Just Chop’em and Drop’em into a big bowl, then mix up a flavorful vinegar or citrus based dressing, toss all together and you have a “balanced meal in a bowl”.

I even have a Zing Factor option.  These are extra little goodies that pump up the flavor of The Chopped.  They may be as nuanced as a fresh herb or as rich as nuts or cheese.

They will always be optional and I list them at the end of the Bowl or Dressing Ingredients. Use one, all or none. They will complement each other.

I created this way of eating because I’m not crazy about “technical” recipes.  The Chopped ingredients are easy to prepare, readily available and inexpensive to buy.

The Hubby (my biggest supporter) and I eat a Chopped almost every night.  I call it The Big Cheat because no matter what I have in the fridge/pantry, be it fresh veggies or leftovers, a yummy meal is as close as my knife and Chopper Dropper (paddled cutting board)!

Whatever your nutritional needs or lifestyle may be, there’s a Chopped for you.  The versatility of the concept lends itself to vegetarian, vegan, or gluten-free eating programs.  It’s a boon for athletes because you can tweak the ingredients to your particular performance needs.

Every day I find more and more evidence that the nutritiously dense ingredients in The Chopped are as healthful as you can eat!  A serving of Chopped is like a multi vitamin, mineral, antioxidant, disease fighting super hero in a bowl!

Meatless Monday Chopped

Serves 4

Bowl Ingredients:

2   Cups Hearts of Romaine, Chopped

2   Cups Kale or Arugula, Chopped

1   Cup Canned White or Black Beans, drained and rinsed

½  Cup Cooked Barley or Brown Rice

1   Cup Chopped microwave steamed Broccoli

10 Grape Tomatoes, Quartered

½  Avocado, Chopped

4   Large Green Olives, sliced, sliced and halved

¼  Cup shredded and Chopped Red Cabbage

3   Green Onions, Chopped

Zing Factor:

2   Tablespoons Dried Cranberries, Chopped

Dressing Ingredients:

1   Tablespoon Olive Oil

2   Cloves Garlic, minced

½   teaspoon Molasses

Juice of 1 Lemon

½  teaspoon Kosher or Sea Salt

¼  teaspoon Freshly Ground Black Pepper

Bowl Ingredients…Chop’em and Drop’em as directed into a Large Serving Bowl.

Dressing Prep:

In a small microwave safe bowl, combine the Olive Oil and Garlic. Microwave on High for 15 Seconds. This mellows the Garlic. Add the rest of the Dressing Ingredients, mix together.

Pour over Bowl Ingredients, toss well and serve. –The Juicer

So Get Your Spoon Ready!  It’s the best way to savor every delicious bite!
